Easy and Creamy Yogurt Cake/Simple ingredients

Greek yogurt cake recipe. The ingredients are simple, the recipe is very easy and quick to make and above all the result is incredible, it’s an airy cake, light and so creamy. Open the description box for the full list of ingredients + the recipe!
Ingredients:
For the dough:
2 egg yolks room temp
1/3 cup sugar
1 tsp of baking powder
1/3 cup melted butter
1 1/4 cup sifted plain flour
For the cream:
2 egg whites room temp
1/8 tsp salt
400g Greek yogurt -2 cups (I use plain but you can use any flavoured greek yogurt of your liking)
60 g sugar
1/3 cup corn starch
Zest of lemon or orange for added flavour (Optional)
Directions:
In a bowl, whip the egg yolks and sugar. Add the butter and whisk.
Then add the flour and baking powder and mix until a crumbly batter is formed. It possible to add a little more flour (1-2 Tbsp.) if the dough is not crumbly enough.
Place it in the refrigerator for 30 minutes.
The cream:
In the bowl, pour the egg whites and beat them with sugar.
Add the yogurt in two batches and continue to fold.
Add the corn starch to the mixture and continue to fold.
Place 2/3 the dough at the bottom of the mould (7 inches), pour over the yogurt cream and spread the remaining crumble on the cake.
Bake at 180C/350 F for 30 to 35 minutes.
Let cool and enjoy.
