Truthfully there's only 3 starfighters that were meant to go toe-to-toe with the Tie Interceptor & survive: Naboo N-1, Rebel Alliance A-Wing, & the Mandalorian Fang. All 3 ships are fast, agile, and extremely maneuverable.

Now that's not to say that Bo Katan didn't handle her Kom'rk-class Fighter Transport exceptionally well. But because her ship doubles as a transport, it is a little slower, bigger, & slightly less maneuverable as we see she does skim the cliffsides & the waters edge a couple times.
