This Muffin Pan Sweet Potato Gratin will perfectly accent any main dish! This tasty recipe is a fun and festive alternative to standard mashed potatoes.

INGREDIENTS
4 sweet potatoes, thinly sliced
1/4 cup butter, melted
1 tsp salt
1/2 tsp pepper
1 Tbs fresh thyme leaves
12 Tbs heavy whipping cream

DIRECTIONS
1. Preheat oven to 400º. Brush muffin tins with melted butter.

2. Thinly slice sweet potatoes and place in a large mixing bowl. Sprinkle with salt, pepper and thyme, tossing to evenly distribute seasoning.

3. Divide potato slices into each muffin cup. Pour 1 tablespoon of heavy cream over each slice. Bake about 35 minutes until potatoes are fork tender and a little crispy on top.

4. Using a thin knife, loosen potatoes from cups and remove using a fork. Serve.

PRO TIPS
1. Keeping the skins on the sweet potatoes makes the prep easier but also adds to the nutritional qualities of fiber and potassium.

2. For beautiful presentation, add fresh thyme sprigs to the top of each individual portion.
