Add just a pinch of salt to your watermelon before you process it in the blender and it will sweeten and enhance flavor. This works with other types of melons like cantaloupe and honeydew tho not sure about other fruits. On mango a little salt was good and with a little cayenne pepper. Also just a pinch with a little fresh basil was great in strawberry fruit leather

I personally like my candies to be a bit on the sour side. I might try this with some sour sanding or just adding citric acid to it.

I bet if youre very patient you can just put it in the sun. The Italians do thjs with their tomatoes. You would have to cover them though maybe with cheese cloth or something similar
