Mediterranean-inspired baked cod with olives, tomatoes, and oregano is a healthy, flavorful, dinner that makes it to the table in 25 minutes, start to finish!

Grab the following ingredients:
* Fresh cod
* Kosher salt and freshly ground black pepper
* ¼ cup extra virgin olive oil
* Lemon zest
* 1 pint halved cherry or grape tomatoes
* 1 ½ cups Kalamata or castelvetrano olives, or a mix of the two, pitted and halved
* ½ medium red onion, thinly sliced
* 3 cloves garlic, thinly sliced
* 1 Tbsp red wine vinegar
* 1 tsp dried oregano
* Fresh parsley

1. Pat the fish dry, then season on both sides with salt and pep. Place on top of lemon slices in a baking dish, then drizzle with 2 Tbsp olive oil and fresh lemon zest.
2. Mix together halved tomatoes, olives, red onion, and garlic cloves. Drizzle with remaining 2 Tbsp olive oil and 1 Tbsp red wine vinegar, then season with 1 tsp dried oregano and ½ tsp Kosher salt. Toss well, then pour on top of the Norwegian cod.
3. Cook at 425F for 15-18 minutes, then serve immediately with fresh parsley and lemon wedges.
