The next time you cook a fat, quality steak, try using a cast iron skillet in your backyard. Season well. 1 hour at room temperature b4 the hot cast iron. Butter. Lots. 7 minutes each side and 7 minutes rest b4 cutting. A crust is the $hit

I’ve found that even the leaner ones have enough fat to make it really juicy. After all, I’m still buying it for the meat, not how much fat is in it.

Obviously a lot of amateurs that don't realize what a bone does for meat. Tomahawks are far more flavorful and tender than boneless ribeyes.

He picks the one I would reject. I don't like the big chunks of fat that I'm paying $16 per pound for. He rejects the ones I would pick that don't have excess fat.
