Carrot, sweet potato and lentil soup - OMG Healthy!

I love using lentils and other pulses for my healthy meals. The carrots and the sweet potato bring the sweetness and earthy flavor a soup should have.

I hope you enjoy it.

1 onion
2,4 dl of dried, red lentils
1 carrot
1 medium sized sweet potato
1,5 tblsp tomato puree
2 tbls olive oil, for frying the onion
6 - 8 dl good stock

Yoghurt or sour cream and fresh herbs to dress your soup.

This is a wonderful soup; I found a variation of it in a regional cookbook about recipes from India, so I added cumin, coriander, some jalapeno, black pepper, a little turmeric ; nothing extravagant. I roasted the sweet potatoes before and didn't use the skin; they provided a little extra sweetness; and used olive oil on fairly low heat instead of coconut oil because that was what I had. Before blending, I wilted some baby kale and a squirt of lime juice; the rest was the same as your recipe, which I think can cure anyone of anything at this time of year! Tx for a streamlined, vr healthy and delicious recipe indeed!!! (Shout out to Alexindeed re: spices -- that's where I got my mix).

I would like to try this recipe, but would like to add some more spices to it. What spices do you think would go good with this? Bra video forresten :)
