I know you're planning a vanilla play through, but I highly recommend the Drag Racing DLC. I love this game, and that's the thing that keeps me playing this regularly. Can't use it until your shop has the Dyno...which will classify your builds (A-E) in order to run drag races with AI in the same class. Also the new Dodge/Plymouth DLC has some great classic muscle cars to find and build like Chads & Barts 🤣, Hemi 'Cuda, Roadrunner. Even a Chrysler Cordoba, still looking for one of those to turn into a drag strip racer. I hope to see more!
