How to make roasted bell peppers stuffed with a savory ricotta cheese mixture.

Ingredients:
2 Bell Peppers
Olive Oil
1 Cup Ricotta Cheese
1/2 Cup Muenster Cheese, Shredded
1/2 Cup Parmesan Cheese
1 Teaspoon Minced Garlic
1 Teaspoon Oregano
1 Teaspoon Parsley Flakes
1 Teaspoon Red Pepper Flakes
2 Tablespoons Chopped Green Onions

Directions:
1. Slice bell peppers in half and take out the seeds and center. Brush olive oil inside and outside each half and place on a parchment lined baking sheet.
2. In a small bowl, mix together the ricotta, muenster, Parmasan, garlic, oregano, parsley, red pepper flakes, and green onions. Fill each bell pepper half with the mixture. Top with more Parmesan cheese. Bake in a preheated oven at 400F for 25-30 minutes or until bell peppers are softened and the tops are golden.
