Poaching liquid
16 cups water
4 tbsp old bay seasoning
5 cloves smashed garlic
5 sprigs thyme
5 sprigs tarragon
5 sprigs parsley
15 whole peppercorns
2 lemons sliced in half

Cocktail sauce
3/4 cup ketchup
Juice of 1/2 lemon
2 tsp Worcestershire
1 tsp hot sauce
3-4 tbsp fresh horseradish (less if using prepared)
Add more or less horseradish to your preference

Guys, don't worry about the fresh horseradish. It is so expensive fresh, and it is harder to come by. The jarred is okay, just use less of it because it is harsher when jarred

I know those shrimp look cooked but they are definitely raw they are just gulf shrimp and are naturally that color. also, feel free to use prepared horseradish it's all good.

If making extra sauce or making it ahead of time, make sure to add a splash of pineapple juice, otherwise the cocktail sauce will gel up, it's a reaction between the pectin in the ketchup and horseradish.

Looks good… don’t miss out on all the flavor those shrimp shells offer. If you must peel before cooking, then tie the shells up in a piece of cheese cloth and toss them in the poaching broth before adding the shrimp.

The best shrimp cocktail I've ever had was at St. Elmo's steakhouse in Indianapolis. The horse radish burned your sinuses. It was amazing. 11/10 can't wait to go back!!!

Homemade cocktail sauce DESTROYS store bought garbage. My friend adds a teaspoon of bourbon, which at first I scoffed at, but really adds depth! Also, fresh horseradish is SO MUCH better than preground stuff! 🤟

Even go to Aldi for $$ value and get their frozen large shrimp and thaw correctly. I do the same with the sauce and it comes out even better than I’ve had at high end steakhouses from cal to Vegas.
