Gaeng som or Thai Sour curry is a Southern Thai specialty and probably my favorite curry.

Its mouth numbingly spicy and deliciously sour and fragrant. Normally served with fish and seafood but it pairs fantastically with pork. Make sure to use pork on the bone, to get that great pork flavor incorporated in the curry. In this recipe, we use pork ribs and salted bamboo shoots, and it's absolutely perfect. Serve with steamed Thai Jasmine rice.

How to make Gaeng Som - Thai spicy sour Curry with pork ribs and bamboo

In a blender put, 20 fresh Thai chilies, 4 cloves of garlic, 15 grams turmeric, 1 tsp salt, 20 grams shrimp paste, and 35 grams of palm sugar.

Add in 200 grams of water and blend smooth.

Put a pot on high heat, add some oil and pour in the curry base. Cook the curry for a few minutes.

Add in the pork ribs and bring to a boil.

Cook the ribs for about 30 minutes.

Add in 1 tsp MSG and 1 tsp chicken seasoning.

Add in 250 grams of water. bring back to a simmer.

Add in 300 grams of bamboo shoots.

Cook for another 10 minutes. Then add in 2 tbsps of lime juice.

Taste your curry and adjust with more lime if needed.

Serve the curry with Steamed Thai Jasmine rice.
