Liver is extremely nutritious. If dolphins can figure out puffer fish venom gets you high, I assume the orcas know liver is yum. Not that much of a mystery.

The craziest thing is that for each large prey (even for each variety of a shark), the Orcas always go for specific body parts and leave the rest, and they go for different body parts for different spicies, they're so good at hunting that they can afford to be that peaky.

I was in living in Hawaii back in the late 90's. One day a report came over the radio that Great White Sharks were seen in Hawaiian waters which is not normal. The GW Shark don't care for the warm waters.
The reason why they were there was a mystery for awhile until researchers in the SanFrancisco Bay put the pieces together.
An Orca attacked a GW Shark in the Bay and every GW Shark in the Bay fled to Hawaii. The attack was caught on camera by a tourist. First of its kind. The tagged Sharks dove deep and fled the Bay immediately and left for a few months. Research the story.
