Dooku helped Sidious because he was disappointed with the Jedi Order and the Republic at large. He's a tragic villain because we know from the beginning that he's destined to fail.
Grievous is not like that. He's one dimensional, but that works in his favor. He doesn't care if the Confederacy of Independent Systems wins at the end of the day, not really anyway. He doesn't even seem to care when he hears the news of Dooku's death. No, Grievous is not in this war for the politics. He could care less. The only thing he cares about is killing as many Jedi as he possibly can.
While not Jedi, Grievous and his droid army all but drove the Nightsisters, one of the most powerful groups of Force users in the galaxy, to the brink of extinction within the span of about a day.
