That pink rock could be quartzite, I'd need to see it in person. Also, I'm not so familiar with the geology of the US.

I think the pink rock is regular granite with pink plagioclase in it and the white granite you have might be something like granodiorite.

The sharp knife is quartzite, which was originally sandstone but has been heated and squeezed to the point where it recrystallized. The layers are remnants of the original sandstone. Quartz is very hard and pretty strong so it makes a pretty good knife blade, good work!
