1. Octopus falafel is the social name of the vendor.
2. He's there from 12pm to 2pm (or until he runs out.
3. He does cook his own menu
4. He is dedicated to his food and would like to not be disturbed while preparing for his customer.
5. He changes his decor according to the seasons or to his liking.
6. He is on Yelp.
7. He's been in center city for 20+ years
8. He buys the most expensive and finest seasonal ingredients available.
9. He focus on healthy ingredients.
10. If you are there for the first time and have questions, just ask the people in line.
11. Bring your appetite because the servings are huge.

He may be open for only 2 hours, but he works for much longer than 2 hours. He cleans his truck for 5 hours, he shops for groceries and preps every day. That means he easily works 10 hours or more a day.

So he gives you a good rice (carbs), meats, veggies, also a fruit. This seems to be the principles of how the healthy food should be, just like in my country, then creates and innovates it every single time with his fresh choices of ingredients he bought before opens the shop. And I agree, he seems to do this as a tribute to someone he dears the most in his life with all the flowers decoration, something like carry on the passion of that person's sake, and one of them could be about a simple, and healthy food that brings happiness
