Pie Dough
¾ cups Almond Flour
¾ cup GF 1 to 1 Flour
¼ tsp Baking Powder
Pinch of Salt
½ cup Dairy Free Stick Butter frozen and grated
1 Egg
Dumplings:
2 small apples, peeled, cored, and patted dry
1/3 cup unsalted butter
1/4 cup granulated sugar
1/4 cup brown sugar
1 teaspoon cinnamon
½ cup water
Vanilla ice cream, for serving, optional
In a large food processor, combine the almond flour through salt. Mix until blended. Next add the cold butter to the flour mixture and pulse to form a coarse meal. Add the egg, blend until the dough forms. Cover with plastic wrap and refrigerate 1 hour.
Preheat oven to 350 degrees F. Coat a 8×8 baking dish with nonstick cooking spray.
Cut each apple into 4 wedges.
Roll the dough into a rectangle between 2 pieces plastic wrap. Cut into 8 even strips longways.
Place an apple wedge on each strip and roll. Place in prepared baking dish.
In a microwave bowl, melt the butter. Add in the sugars and cinnamon; stir until smooth.
Drizzle butter mixture over the dough.
Pour ½ cup water to the sides of the dumplings (not on top).
Bake about 45 minutes or until golden brown and apples are tender when poked with a fork. Remove from the oven and let stand 10 minutes.
Serve with some vanilla ice cream!
