How to Make Knafeh | Kanafeh Recipe

Knafeh or Kanafeh is super delicious middle eastern dessert that made of kadayif, cheese and syrup. If you never tried it, now it’s the time!

My favorite kitchen equipment and camera gear:

Ingredients:
1½ sticks (165g) + 2 tbsp unsalted butter
1 cup (240 ml) water
1/2 cup (100g) sugar
1/2 tsp rose water
1 tsp lemon juice
1/4 cup (33g) pistachios (roasted)

*Instead of ricotta cheese you can use goat cheese, mozzarella or another cheese that you like.

Directions:
1. Make the syrup: in a medium sized saucepan, combine sugar, water, rose water and lemon juice. Bring the mixture to a boil over medium-high heat. Simmer until the sugar is dissolved and the mixture is thickened, 5-6 minutes.
2. In a large bowl separate well the kadayif noodles, add melted butter and mix well until the butter riches all part of the kadayif.
3. Melt 1 tbsp of butter on 9-inch (23cm) pan. Spread half the of kadayif noodles onto the bottom of the pan. Carefully press with wooden spoon. very gently spread the cheese, leave 1cm space at the edges and cover with the rest of the kadayif. Press gently on the top and on the edges to make beautiful round shape. Fry about 5 minutes over medium heat until the bottom is golden. Put a plate on top, and flip over the knafeh, and 1 tbsp of butter and fry the other side 5 minutes more, until golden.
4. Turn the heat off and pour the syrup (you can use all the syrup or some of it). Transfer to a large plate and garnish with pistachios.

That stuff is awesome...when i went to Lebanon i ate that all the time...when i came back to canada i try that but instead of putting the usual syrup, i poured some maple syrup...it was fantastic!!

One of my favorite desserts!
My friend from Egypt uses mascarpone instead. It’s the only way I’ve had it and OMG it’s delicious. This video shows exactly how she makes it but just switching to the mascarpone.

I went to Turkey on holiday, we had something for dessert that looks a lot like this; I'm really hoping that this is what I had, because I am so excited to taste that again.

For anyone wondering, I tried this with Vermicelli Fideo (because I didn't want to spend $20 on Amazon for the correct type of Vermicelli, and they don't carry it at my grocery store), but it definitely did not turn out correctly. I did fry the Fideo first. I do not recommend trying it this way. It was still tasty, but the structure was completely off using the wrong kind of Vermicelli. I'm just letting people know in case anyone is tempted to try it.

for those of us that are lactose intolerant, I've found that kefir labne works well as a replacement for ricotta. Mixing the labne with some sugar helps to blunt the labne's tartness.

I found that Queso Fresco worked much better than ricotta...closer to the "real thing" since the queso fresco doesn't melt or isn't "squishy/wet" like ricotta. Akkawi or Nabulsia cheese (used in Jerusalem from where I first tasted this amazing dessert!) is not readily available in much of the USA and so after using mozzarella first since that is what many recipes call for I went with the queso fresco...I did put a little sugar in the shredded cheese to make it a little tastier. Try this recipe, you won't be sorry!

This was so good to watch!! My mom makes a different version of kunafa ( with vermecilli and minus the cheese - she adds cream, milk and condensed milk).
And I would love to eat this version! 😍😍

This is a pretty good recipe!
Since I come from Nablus in the West Bank, the place where knafeh was invented, I realize how hard it is to get the sweet cheese (since now I live outside), but I guess ricotta cheese is a great alternative!
