THE EASIEST VEGAN KATSU CURRY - (Super tasty)

Katsu curry is a very popular Japanese dish that was introduced by the Brits in the early 1900's. For many years the Japanese assumed that curry was a traditional British dish, of course we stole our tea and curry culture from India! But thats a story for another day.
If you like curry you will love this dish, the curry sauce differs from Indian style curry slightly, so if you don't like Indian curry you may still love this recipe! It is less aromatic and not as spicy than Indian Curry, you could call it mild, but that doesn't quite fit either, Its sweeter and has more umami too.
The rice is perfectly cooked and fluffy. The curry sauce is rich, sweet and sticky. The tofu is panéd (coated) with panko breadcrumbs and fried until crispy, this dish is pure comfort food and just like most of the food I make it is nutritious without sacrificing on flavour.
Its not difficult to make and a lot of the ingredients you may already have at home. If not go out and buy the ingredients and make it, thank me later!

RECIPE
3 tbsp olive oil (for cooking)
1 large onion (roughly chopped)
1 large carrot (peeled and roughly chopped)
3 large fresh garlic cloves (peeled and roughly chopped)
1 tbsp curry powder
2 tsp garam masala
1 tbsp flour (or rice flour for GF)
4 tbsp tomato pasata or chopped tomatoes
800ml vegetable stock
2 tbsp tamari (or soy sauce)
1 tbsp refined sugar or other sweetener
1 tbsp red miso
1 tsp salt
