the grey on your reflector card is because the dslr white balance is set to 18 % grey as a true white if you have a full fledged video camera it would want a white black and grey balance to get your color correct

The grey cards are used to set the white balance either in camera or during post. The camera's light meters are are programmed to 12 or 18% grey (there is dispute as to which) and this pushes the whites in an image toward grey. So you can us the card to show it under your lighting conditions what the grey or white actually is for a custom white balance either in camera, or in post (you select this for your wb and apply those setting to the rest of your images).

It works with grey because any consecutive colors in CMYK is a nutral grey color so if the camera can determine one solid nutral color it will be able to "tell" more accurately what other colors are.

Although I have owned a manfrotto monopod since day one of having the camera, I find that I actually use a lightweight tripod way more often, as I can use it as a monopod, and within a second kick the legs out and step away while the camera records something. I also use it as an extension handle for getting super-low angle shots (the shot is upside down, but you just flip it in post). I had a gig running around the pit area of a motor racing event, and found the lightweight tripod doubling as monopod, boom and extension stick that can put the camera under a car being worked on to be pretty awesome.

My other bit of must have gear (possibly because my camera keeps ending up far away from my line of sight to the screen) is a remote monitor, I managed to get a second hand 7inch monitor for about $40, it is amazingly helpful. And I have been known to use a 2m HDMI cable and have the monitor hanging on my chest So I can just glance down and see what I am recording regardless of the position I am holding the camera.
If your DSLR has a wifi out feature, this will work even better for you.

Last "must have" for Canon owners is MAGIC LANTERN. Get it, use it, love it. If for nothing else than the sound and delay aperture fade, it will make your DSLR behave itself in a more video camera manner. (In truth I think I have about seven ML features ON at any one time when shooting on the DSLR)

For sound monitoring in noisy environments, also make sure to get closed back headphones and not open (also important for post production recording where the headphones are very close to the mic).

For people on a budget I suggest the AmazonBasics 60in tripod. It comes with quick release, levelers, and it's made for video shots out the box for under 30 bucks.
Currently I'm using it with a phone adapter until I get a dslr but my phone is doing fine for the type of videos I shoot.

My video bag for both weddings and commercials has a Canon T5i with a 24-105L and a 50mm 1.8, a Tascam DR70D and a Tascam DR10 for audio, and a super basic Manfrotto tripod. I play with one of those Spider Steady rigs from Amazon to make different types of grips and body braces for each project (highly recommend finding the one with the follow focus included).

My tripod hands down has to be my most used accessory.  I use a cheap $30 version but it has been a game changer.

Sean great video. The only thing that you forgot to mention is to make sure that your headphones aren't noise canceling because if they are, they may cancel out some noise that the external audio recorder is picking up.
