This is a delicious and hearty meal we love to eat at home and it is also another one of my mom’s specialties – so she’s gonna oversee me a bit in this video to make sure I cook it just like she does. What I love about this recipe and about Tex-Mex or Mexican recipes in general is that they’re really pretty easy to make if you have a good recipe. Here is what we use:

1 ½ lb Cubed Sirloin
2 Russet Potatoes
½ an onion
⅓ green bell pepper
1 roma tomato
1 bay leaf
2 garlic cloves
2 tbsp of tomato sauce
3c chicken broth
APC OG & Comino to Taste

My Mexican wife of 53 years passed away 1 year ago. She was a wonderful cook and introduced me to wonderful Mexican meals over the years. I miss her very much and only now am I trying to learn how to cook some of the dishes she made. Man Arnie you are very fortunate, to be have your mom there helping you. My mom is gone and she was literally one of the greatest cooks I knew....I miss her food so thank you for your sharing with us your mom.... peace

Just found your channel and loving it so far. Wanted to say this though. I lost my Mom about 6 months ago, and when you were like "I've got someone looking over me" and your Mom says "always" I flat out cried because that's exactly what my Mom would have said to me.

It's so wonderful that you get to do this and that your Mom is there to be a part of it and that there's clearly so much love and respect for each other. I hope for health and success to you both.

The relationship you have with your mama is absolutely beautiful and a blessing. I lost my mom to suicide at the age of 6. My daddy never remarried so I never truly knew what it was like to grow up with a mom. My daddy was an amazing father/mother role model, but there are just some things a daughter can’t talk to her dad about so although my tias tried to be there it was never the same. May god bless your mom with muchos años mas de vida and treasure what you have. Btw I tried your recipe, it was sabroso! Blessings from Victoria, Texas

Born and raised in the RGV, a lot of the food we ate growing up ( and still eat ) is good for the Soul as well. It is food that makes us proud of our heritage and culture .

My wife and Mother in Law are Mexican, MIL too old to cook any more, wife’s works full time, so I’m the chief, I love you down to earth recipes and they are easy to do, my wife knows how to cook great Mexican, she slow to show me 😢but that’s were YT shines!

Looks delicious Arnie! My wife's family is from the Valley region of South Texas, and her mom always made what she calls conchitas (I think its also called sopa de conchas). Your mom's carne con papas very much reminds me of that. My mother in law's recipe uses diced beef and potatoes as well, but we also occasionally use diced chicken. Great comfort food, especially on chilly fall and winter days!

So glad I found your channel. I was born in McAllen and grew up in Rio Grand City. I now live in WV and have missed this dish so much. My mom would make it weekly and I never got the recipe before she passed away. Made this tonight and it brought back great memories! Thanks again!

Growing up in South Texas, this recipe reminds me of my mom cooking lunch for my dad early in the morning. The entire house was filled with this delicious aroma. Thank you both for the memories. Lots of love from Pasadena, California!
