The ingredients:
- 3 Shallots
- 0.5 lire of white wine
- 1 sprig of rosemary
- 1 bay leave
- 1 sprig of thyme
- 8 peppercorns
- 180 grams of whipped cream
- 100 grams of cold cubes of butter

So haben wir vor 30 Jahren in einem 2 Sterne Restaurant die Beurre Blanc hergestellt. Wenn die Säure vom Wein nicht reicht nimmt man Zitronensaft oder gegebenenfalls einen Essig.
Die Schalotten haben wir nur geschält und nicht geschnitten, diese wurden in Rotweinsosse zu gebratenem Rindfleisch gereicht und wurden mitgegessen.
Sehr schön, bei meiner Meisterprüfung kannte man diesen Weg nicht.
Da hatte auch keiner einen Stern 🌟.

hi! i like your videos, but im a chef from NANTES ( the beurre blanc is aslo called beurre nantais, it been invented by one of my old familly member into her restaurant, chez clemence at la divate close nantes... so inot the classical french original recepie, it never been cream or herbs.. but half cider vinegar half muscadet wine, shallots and butter :)

I like your recipe but what do you do with the actual shallots? It seems a waste of shallots

Why dont u reduce wine to almost gone, about 1 to 2 tbsp remaining as some chefs do
