i am pretty sure in asia (pwrticularly in the east and southeast), the chinese eggplants are the regular eggplants xD.... we also have round eggplants that is as big as a tomato

The skin on the globe/ teardrop eggplants (aubergine) is tougher and more difficult to cook in a stir-fry. The flesh ends up overdone, falling apart and the skin is difficult to bite through.

P.S. Your dad's tip for 魚香茄子, where he steamed the aubergine first, has been so helpful - the veg is cooked evenly.

Chinese eggplant Same here in Indonesia, we can find in traditional market, the big one more expensive and only in supermarket.

We have green one

In Italy we also have eggplants that are in between the chinese and the american, which are great for stuffing and we also have ones with a rather more round shape (huge orange) and those can be with blue, pink and white peel and there's also a white-pinkish peal variety... and yeah, they taste more delicate than the dark ones and are less bitter. I prefer the thinner ones in the pasta sauce, becouse they don't get mushy and stay more in a chunk.

Normal eggplant is from Indus where as the skinny ones are chinese origin.. soo yummy being Asian. Eggplant, olives, tomatoes, spices (most) coming from Asia amazing me..

you can find both big eggplants and the long lean ones in the northeastern part of india where i’m from
they’re both widely eaten by people of my culture

Chinese eggplant is just so much better than the American one, its so soft and tender and silky…it can be hard to come by in the Asian groceries in my hometown but is so worth it! I do still use American eggplant but only for dishes that can benefit from the more tougher texture to avoid mushiness, like ratatouille.

A side note: I wish the video title didn’t enforce the idea that American versions of vegetables are “regular” and therefore non-American versions are somehow “irregular.”

I use Chinese eggplant for ratatouille, it’s easier to line up in the pan.

I grew up knowing mainly the "Chinese" eggplants, which is what my dad always grows in his garden every year.

We've these in India. My mom usually buys those small bulb eggplants or these chinese ones. Big ones are rarely purchased and are used for like one dish.

I usually pick up Indian eggplant as it has a far better texture and tastes compared to every other variety that I've tried

There are many varieties of eggplant. There aren't just two. And what you're calling Chinese eggplant is grown all over east and south east Asia.

Chinese eggplant is same as what we grow in india😄i think its native to pan asia.
