I used cut up chunks of used bourbon barrels, soaked in bourbon for a week, then soaked them in a traditional mead for two weeks, before adding a little vanilla. Ended up winning 1st place at the local fair scratch wine contest.

I mixed in some orange juice and some spices to fix an over oaked elderberry mead. It worked really well and gave it some sort of holiday spiced wine flavors
