🥣 Ingredients:
10oz | 280g | 1 medium size sweet potatoes
1.3lb | 700g | 4 medium size potatoes
45g | 3tbsp dairy-free butter
thyme
black pepper and salt for seasoning
3tbsp dairy-free parmesan
1tsp garlic powder
🥣 Ingredients for creamy mushrooms:
300g | 10oz mushrooms
45g | 3tbsp dairy-free butter
1tsp cumin seeds
1/2 onion
2 garlic cloves
1tsp corn starch
1tsp paprika
salt to taste
250ml | 1 cup dairy-free cream
freshly chopped parsley
🧑🍳Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗If you do not have mandolin slicer you can use a knife, cheese planer or vegetable peeler.
🥣 Method:
Peel 1.3 lb | 700g | 4 medium size potatoes.
Using a mandolin slicer or a knife, thinly slice the peeled potatoes.
Place to a large mixing bowl.
Peel and slice 10oz | 280g | 1 medium size sweet potato.
Melt 45g | 3tbsp dairy-free butter.
Pour over potato slices.
Season with fresh thyme, black pepper and salt, 3tbsp dairy-free parmesan,
1tsp garlic powder.
Mix until combined.
Grease muffin tray with dairy-free butter.
Fill the muffin cups with potato slices.
Sprinkle with black pepper and thyme.
Bake in the preheated oven at 320F | 160C for 60 minutes or until potato edges and tops turn golden brown.
Melt 45g | 3tbsp dairy-free butter.
Add 1tsp cumin seeds.
Slice 1/2 onion.
Chop 2 garlic cloves.
Add 300g | 10oz mushrooms to the pan.
Cook for about 5 minutes.
Add 1tsp corn starch, 1tsp paprika, salt to taste.
Pour 250ml | 1 cup dairy-free cream.
Cook for about 5 minutes until creamy and thick.
Chop parsley and combine well.
