Chocolate cheesecake with cherries 😍 (recipe in description)

From this amount, you can bake a cheesecake with a diameter of 14-16 cm, or bake 6 pcs. popsicle shape 🌷
RECIPE:
Curd cheese - 200g
Sugar - 55 g
Dark chocolate (from 54%) -115 g
Cream 33-35% - 75 g
Egg - 1 pc
We mix the products as in the video, distribute the popsicle in a silicone form, add the filling, install the sticks, put it in the oven for 1.5 hours at 100-110 degrees in a water bath (put another baking sheet with water on the bottom of the oven), when the cheesecake has seized and moves away from the form - cool and then put in the freezer until completely solidified.
Filling - any berries, I have cherries
The berry can be chopped, or a whole berry can be used:
Cherry - 70 g
Sugar - 20 g
Corn starch - 10 g
Boil cherries with sugar and starch until thickened, cool before using.

If you are making a classic cheesecake - take chocolate cookies for the shortbread base (approximately 150g chocolate cookies + 30g butter, and prepare a shortbread base without sides)
For popsicle-shaped cheesecakes, I used the shape:

Finished figure size: 9 cm x 5 cm
