INGREDIENTS
For the Caprese pie bites:
1 sheet puff pastry
2 eggs, beaten
Basil pesto
Baby roma tomatoes
Mozzarella cheese
Sesame seeds, to garnish
For the cheese & onion pie bites:
1 sheet puff pastry
2 eggs, beaten
Onion jam
Brie cheese
Sesame seeds, to garnish
For the chocolate marshmallow pie bites:
1 sheet puff pastry
2 eggs, beaten
Dark chocolate
Mini marshmallows
Brown sugar, to garnish
For the berry pie bites:
1 sheet puff pastry
2 eggs, beaten
Strawberry jam
Cream cheese
Raspberries, cut into halves
Blueberries, cut into halves
Brown sugar, to garnish
METHOD
1. Preheat oven to 180°C.
2. Cut each puff pastry sheet into half. Place one half over an ice cube tray. Press the pastry down in the centre to create small wells in each hole.
3. Fill each tray with the filling combination of your choice.
4. Brush all edges with beaten egg.
5. Cover the fillings with the other half piece of pastry.
6. Using a rolling pin, roll over the tray to seal the edges. Cut the excess pastry from the edges and flip over onto a cutting board. Cut through the sealed edges to create individual cubes. Place these onto a greased baking tray.
7. Brush each pie bite with the remaining beaten egg. Sprinkle the savoury pies with sesame seeds and the sweet pies with brown sugar.
8. Bake for 12-14 minutes until golden brown.
9. Serve the pies fresh from the oven and ENJOY!
