I might try making this myself, but instead of the sweetened peanut butter, maybe the "natural style" one that's got some good nuttiness to it but also some salt to balance it out. Pair with cheddar and a nutty cheese and then add raspberry jam (President's Choice is actually a good choice as it's less sweet and more tart) before grilling, potentially bringing back the sweet element with the butter by adding cinnamon and sugar to the butter in question. Just my ten cents.

The jelly I can still see working with the right cheese, as cheese and fruit combos are a thing, but the peanutbutter with the cheese I'm having a harder time with.
Fun fact: in Dutch, peanutbutter is called pindakaas which literally translates to peanutcheese
