I dry persimmons in my food dehydrator, I like to grind them up and mix them with cinnamon and put it chai tea, it’s delicious.

I got a pack of dried persimmons from my local Korean market, and I don’t think they were dried anywhere near 6 months bc the ones I’m eating are still orange on the inside. They are very sweet, and I find them to be quite reminiscent of red bean paste in texture. The flavor also reminds me of red bean paste and taro, with the characteristic persimmon fruitiness (but without the male… ejaculate scent; I’m sorry, fresh persimmons have a cum-like smell to me).

They’re almost kind of meal-y, making 2 a great snack just by themselves; high in fat and vitamins. I’m kinda mad I haven’t bothered to grow these before, they’re great

Edit: I said red bean paste “mochi” at one point, which was redundant

I wonder what would happen if you soaked those dried persimmons in water to rehydrate them. I was reminded of dried mushrooms that need to be soaked in water before adding them to a dish.
