For the bitter melon (my country calls it carillie), it’s usually cooked with spices.

In my personal opinion, it STILL tastes bad and bitter when you cook it. Which I mean, shouldn’t be surprising considering it’s BITTER melon 😂😂😂

In Okinawa, Japan the Bitter melon is called "Goya". In the Philippines, we call it "Ampalaya". And no, we don't eat it raw. We usually stir-fry the thing. But it still tastes bitter. But I have gotten used to the taste of it since it is a staple in our home.

That green fruit is not a fruit that's a vegetable(known as "karela") and it is cooked first. It has very very high nutritional value and is considered as one of the best healthiest food item.

For the bitter melon (in my country it's called "Ampalaya")
It's most likely left on a water with lots of salt to brine and it helps to lessen bitterness and we cook it with spices sometimes with a scrambled egg to have more flavors if im not wrong it's a vegetable?
