Cheese Gal stopped by April’s to see her holiday tablescape but didn’t leave without teaching April a couple of her favorite recipes!

'This is what dreams are made of’ - April on Cheese Gal’s Crispy Baked Boursin Appetizer

INGREDIENTS:
Boursin cheese (Cortney used garlic Herb but any flavor would work)
flour
Panko bread crumbs, seasoned with salt & pepper
1 egg, beaten
spicy honey
chopped rosemary, for garnish

DIRECTIONS:
Preheat your oven to 410 degrees.
Line a baking sheet with parchment paper.
Set out 3 bowls: fill one with a little flour, one with your seasoned Panko bread crumbs, and one with a beaten egg.
Take your Boursin cheese out of its foil and place into the flour making sure all sides are covered well.
Dust off the excess, dip into the egg, and then dip into the Panko bread crumbs.
(Again, make sure to cover all sides!)
Carefully place the Boursin on an oven-safe baking dish and bake in the oven for 20-25 minutes or until crispy brown. (If needed, broil for a minute or so to get the outside browned.)
Once out of the oven, drizzle with spicy honey and garnish with chopped rosemary. Enjoy with your favorite bread or crackers!

‘Nothin says festive like a pomegranate martini’ - Cheese Gal on her Pear Pomegranate Martini

INGREDIENTS:
4 oz fresh Pomegranate Juice
2 oz Dry Gin
1 oz elderflower liqueur
Juice of 1 fresh lemon
1 oz rosemary pear simple syrup

DIRECTIONS:
For Simple Syrup -
Combine equal parts sugar and water in a pot on the stove and boil until the sugar dissolves. Add rosemary sprigs and pear slices for flavor. Pour into a glass jar and seal tightly with a lid. (Simple syrup will keep, refrigerated, for a couple of weeks.)

For Cocktail -
Combine your ingredients in your favorite cocktail shaker. Shake well to ensure it is nice and cold. Pour into your favorite cocktail glass. Add a thin pear slice and rosemary sprig for garnish.

Cheese Gal tip: You can pre-make this cocktail in a big batch ahead of your holiday hosting. Multiply recipe by the number of people attending your event and pour into a large pitcher so that it’s ready to serve!
