4-5lb chuck roast cut into pieces
3 carrots Chopped
3 Celery stalks Chopped
1 yellow onion Diced
2 Tbsp tomato paste
1 pint guiness beer
4 cups beef broth
2 bay leaves

1. Season beef with S&P, dredge in flour to coat
2. Heat 2 Tbsp veg oil over medium high heat in bottom of Dutch oven or other heavy bottom oven save pot
3. Sear beef on all sides 3-4 minutes, in small batches... set aside on plate (pan will get hot and oil will splatter, use a splatter screen)
4. Lower heat to medium, Add more oil to pan if needed, add carrots onion and Celery and sautee 5-6 min, season with salt and pepper
5. Add tom paste and stir with veggies for 2 min
6. Pour in beer and stir
7. Add 4 cups beef broth
8. I like to bring pot to a low boil and then transfer to a 350 degree oven for 2 1/2-3 hours
Serve stew by itself with a loaf of crusty bread or over mashed potatoes

You can also simmer this on med low heat on the stove for the same time or so...I would stir it every so often on the stove so It doesn't burn on the bottom

Crock pot works too, add to crock pot after adding the beef broth...cook on low about 6 hours high 3-4

This is just how I do it...I know there are a tons of seasonings and ways to make stew..
