Elevation is the measurement of a ground base object above mean sea level like a mountain peak or the threshold of an airport runway. If you google the highest point in Florida it is 345 feet in elevation above mean sea level. Altitude is a measurement of an aircraft, in flight, above mean sea level. I really enjoy your videos and you are the reason I have a new All American canner. Thank You

I, as a child, remember being yelled at to stay away from the stove become the pressure canner could explode and kill me. So needless to say, I only did water bath canning since the 70's. When I was in my 60's my husband bought me a pressure canner and said "Now use it!". My only regret is that I wasted 40 yrs. not pressure canning!! It's true. The last question was the one I had when I first unboxed and used the canner for the first time. I was so used to covering the jars that I thought I was reading the booklet wrong. So I called Presto and asked. The lady really got a little "huffy" with me for not knowing how much water to put in. Her retort was "It's on page (whatever it was). Read it there." I still had to reread it several times before it burned into my brain that you don't have to COVER the jars with water!

I know this isn’t a dumb question lol. But I was canning my corn and noticed that steam was coming up from around the lid of my canner. I know now that I need to buy a new gasket for my lid. My question is can I cool my corn and stick it in the fridge until my gasket arrives. It was a lot of work. I’m scared of losing my corn so I’m just reaching out in anyway possible to see if it would be OK to process it when the gasket arrives in two days?

Do you think underventing would cause siphoning? I canned some beef with broth for the first time and all 6 quarts had some siphoning. Did I use too much broth even though I left an inch headspace? I'm a newbie so any help would be greatly appreciated!

OK LEISA, I HAVE A QUESTION :-) I have watched videos from way back when you pretty much started on youtube, now with that being said ( LOL ) I want to know your SECRET, How is it that you look younger today than you did years ago, whatever it is girlfriend keep it up. Hey. MS Lesia, just wanted to say I have been watching your channel before I subscribed. . And I have heard you say that. People should look at their manual. For the water in the canner. Sometimes I think people using canners are like some men following directions for putting things together. LOL. I live in Florida. It's one block. To the Halifax River, and as the crow flies about a mile to the ocean. So what altitude would that make me? LOL. Great video even better for the newbies. I know the information is important. I can for one, so I put things up in half-pint jars most of the time. That means a recipe that yields 7 quarts makes 28 half-pints. it makes sense for me to stack you jars in the water bath.

I have a tip! From my first pressure canning experience... If you have an electric coil stove with drip pans, be sure to thoroughly clean the area around and under the edge of the drip pan, including the underside of the drip pan itself (especially the edge). At such high heat, anything under the edge of the drip pan will cook onto the enamel very hard and be difficult or impossible to remove. Unless someone has a suggestion how to clean it off?
