No Bake Chocolate Chip Cookie Dough Bars! They can be made gluten free, dairy free, and refined sugar free, and they’re so easy to make.

Cookie Dough:
•1/2 cup natural peanut butter
•3 tbsp coconut oil, melted
•1/3 cup pure maple syrup (room temp or slightly warmed)
•1 tsp pure vanilla extract
•1 1/4 cups oat flour (I use homemade — simply blend rolled/old fashioned oats in the blender to make oat flour)
•3/4 cup almond flour
•1/2 tsp salt
•2.5 oz dark chocolate, chopped (or chocolate chips)

Chocolate Ganache:
•5 oz dark chocolate
•3 tbsp hot water

Instructions:
1. Add the peanut butter, melted coconut oil, maple syrup, and vanilla extract to a large bowl and mix until smooth. Once mixed, add in the oat flour, almond flour, salt, and chocolate and mix until a smooth dough forms.
2. Add the cookie dough to a standard loaf pan lined with parchment paper and smooth it out.
3. Next, melt the dark chocolate and hot water together (on the stovetop using the double boiler method or in the microwave). Once melted, spread the chocolate ganache over the cookie dough then place in the fridge to harden for at least 1 hour.
4. Once hardened, remove the cookie dough bars from the fridge, slice, and enjoy! Store leftovers in the fridge.

Notes
•Use refined sugar free/sugar free chocolate to keep the recipe refined sugar free
