It looks like the top and 2 side strips only cover 1" of the triangle, but what about the bottom corners where there is no triangle? Does on strip cover the other?

Never use folded binding like that. You don’t need the extra bulk in the seams. Cut strips 2 inches wide and turn under 1/4 inch on the edge. It will turn much easier
