Some New Orleans or Louisiana style coffee contains chicory as well! It is very common to include chicory in cafe au lait.
Also - I just tried your slow espresso recipe with a Vietnamese phin and it was delicious. I could not believe how good it tasted!

I have been making filter kaapi or degree kaapi using a blend of 80% Ethiopian coffee and 20% chicory. I really like the way kaapi tastes, reminds me of the many dabra's of kaapi I learned to love in Assam while I was growing up there. Also, you have to say "Ay-yo" a few times as you savor the kaapi!!!! :):)

Hi, I tried your previous slow espresso recipe, but maybe because I'm using a different brass filter, but the drip down didn't happen, would you know what parameters I should look at when the drip is blocked? or if the drip down goes too fast? is it how do I tweak the grind?

I guess the compressor is important, because you have to use it to remove the air pockets, and also it allows slow percolation of water through the tiny gaps in the coffee granules and to get nice
and thick And using It will make the coffee granules chamber more porous and the water will pass through those large holes very very fast resulting in a very diluted It can be seen by the colour of the resultant

Do I buy roasted chickory and grind it with the coffee beans or do I buy chickory already grinder and blend them with coffee that I grind? Please help, I want to make it authentic. Other than being medium roast beans, is there anything else you would recommend about the beans? I have medium roast Ethiopian right now.
