Extract Text between 1st and 2nd occurrences of the same character in Excel - Office 365

Sometimes you may need to extract text between 1st and 2nd occurrences of a character like the text between two dashes in a string. You can use FIND or SEARCH with MID and SUBSTITUE functions to extract the text.
