Homemade Lamb Shashlik (Шашлык) or Beef Shish Kebab Skewers Marinated and Cooked Over a Charcoal Grill, like Russian version of Turkish Skewer Kebabs. Some people add pomegranate juice, kefir, vodka, vinegar or a thousand different things to tenderize the meat. Everyone has a secret recipe, mine is quite simple, there is no secret. This is how I make my Russian Shashlik recipe. Marinated Lamb Skewers over Charcoals

I'll be making these next weekend, thank you for sharing and for explaining about the acidity of onions! I grew up in a Russian neighborhood and find myself missing these from my friend's parents cookouts haha I think I'll make tomato cucumber salad and something pickled to go with it 👍

Я в уксусе мариную🙂 но вариантов огромное количество из чего делать маринад.

Также важно жарить именно на углях, чтобы не было прямого огня . И при этом следить, чтобы от углей продолжал идти жар

Do you do anything with the left over onions? I imagine they must have a ton of flavor in them after the marinade.

Salt in marinade draws out all juice from meat. Leave this step only before grilling...

If you don't use lemon juice it's not shashlik

Turmeric powder and cinnamon powder reduce the smelly flavor, dont need much to have a cleaner flavor.
