This scene is honestly a way better demonstration of Beerus' power and threat level than if he just blew up the whole planet.
At this point in time, villains that can blow up planets were a dime a dozen. But to have the skill and mastery to blow up a planet clean in half shows another level to it. He's got the power to tap his finger and blow it up, but he knows exactly the amount of force to destroy an exact amount of something.

Funnily enough, As God of destruction, he's supposed to destroy planets. While many other G.O.Ds cull weak planets. Beerus culls the ones that can't cook, making a universe that has the best cooks

Something people tends to ignore is that Beerus does not destroy worlds because of selfish reasons. He is actually doing his job, BUT he offers a salvation chance. The thing is that most planets he has to destroy fails. This one at least saved half of it. Earth was not in danger at all until he got pissed. That one WAS selfish, but is a different situation. His job is to destroy planets that have to be destroyed for one reason or another.
