I go up to 6000 grit if I want a polished edge on a stone. Most of the time, I only use 240, 400, and 1000. 240 only for reprofiling or fixing chips. You can get a knife sharp as hell at 1000 grit. Some people say not to jump grits, but I usually go straight from 240 to 1000 as long as I’m happy with the edge. It doesn’t seem to matter. I only really use my KME when I want that mirror polish.

I've had my ups and downs, but nowadays, when I'm done, my knives are usually sharper. But more than anything, I enjoy the act. I guess ... it's different than staring at my computer.

Freehand is the way to go I would recommend getting a lower grit stone for reprofileing a 120 or 220 shapton would work or an atoma, sic waterstone otherwise you have a good setup for most steels and sharpenings an atoma is great as you can also use it for quick stone flattening
