I do basically the same thing with limes and ginger. I'm in PV, so it is super easy to find everything. I'll have to try the tamarind! ✌️

You can enjoy your tamarind in other ways. 1. Make Tamarind Balls - after removing the tamarind from the pods/shell, group about 2-3 seeds and roll it in copious amount of brown sugar to form a stiff ball. Do a final roll in sanding sugar. Some people add a tad of rum/alcohol just to preserve it or to balance the sugar.
2. Tamarind Fizz - Soak the tamarind in adequate water. (If using hot water, let it cool). Strain. Sweeten with sugar and put to chill. Pour into drinking glasses and add some Bicarbonate of Soda/ Baking Soda and whisk with a fork until foam is formed. Enjoy ❤
