These carrot raisin bars are so flavorful and easy, you must SAVE and make them - they are great for part of a school lunch or after school snack!

Mix the following in a bowl:
1 cup @onedegreeorganics oats (if you aren’t using this brand you may need to add a little more since these are thicker/sprouted)
1/4 cup @go_raw cinnamon pumpkin seeds (you can use regular pumpkin seeds too)
1 tsp cinnamon
Pinch nutmeg
1/3 cup + 1 TBS almond butter (or nut butter of choice/sunbutter)
1-2 TBS honey (or maple syrup - but I found honey helps them hold together better)
1 TBS Water (start with that and add more if they don’t seem to stick)
1 TBS raisins
1 carrot, shredded or chopped small (about 1/2 cup)
*Press in a 8x8 pan sprayed lightly with oil, or use parchment paper. Let sit in the fridge for at least 3 hours before cutting into squares. Carefully take them out. If they break, you can easily re-form. This also works if you have a bar mold or a loaf pan for a thicker bar.*
