Roasted Vegetable Sandwich
Ingredients
For the roasted Veggies
1/2 cup red peppers
1/2 cup yellow peppers
1/2 cup green peppers/capsicum
1/2 cup mushrooms (sliced)
Salt & pepper to taste
2 tsp chopped garlic
1 tbsp chopped coriander
1 tsp dried oregano or thyme
1 tsp chilli flakes
2 chopped green chillies
3 tbsp olive oil.
For the wasabi butter (optional)
3 tbsp butter
3 tsp wasabi paste
1 tsp chopped garlic
1 tsp chilli flakes
1 tbsp chopped coriander
Salt & pepper to taste
Other ingredients
6 bread slices
1/2 cup mozzarella cheese
Method
1. Cut all the veggies in large chunks & place them into a roasting pan, add the rest of the ingredients, season with salt pepper & olive oil.
2. Toss these well & roast at 180 C for 10-15 mins. You ca. also grill the veggies in a pan if you want don’t have an oven.
3. While the veggies are roasting, prepare the wasabi butter, this is completely optional & you can use just regular butter instead.
4. Mix the ingredients up & keep aside.
5. Once the veggies are done let’s assemble our sandwich.
6. Place the bread slices on your work surface, spread with butter, then the veggies & lastly the cheese.
7. Close the sandwich with another slice of bread & spread with more butter
8. Place the sandwich on a hot pan & weight it down using a heavy container, cook both sides till crisp & serve .
