*Recipe:* Banza Chickpea Mac and Cheese (spicy)

*Ingredients:*

- Elbow Macaroni (Banza Brand)
- Onion
- Bell Peppers
- Shredded Cheese
- Butter
- Flour
- Milk (cream and half and half can be a sub or supplement to milk for creamier texture)
- Onion Powder
- Garlic Powder
- Smoked Paprika
- Red Chili Powder (cayenne for less spicy)
- Cheese from Banza (it is processed cheese)
- Shredded Cheese
- Parsley for Garnish
- Neutral Oil (Olive or Avocado oil)

*Home-made Cheese Recipe:*
*_(For those that don't want to use the packet cheese)_*

- 2-4 Cups shredded Guyeure Cheese *(not required)*
- 2 Cups of shredded Cheddar cheese (Tilamook brand)
- 1 cup of Parmesan or Mozzarella cheese
- 2 cups of Milk
- 1½ cup of Half and Half/Yogurt *or* 1 cup of Cream (2½ cups of milk)

*Divide the cheeses into 3 piles of 1½ before cooking it with the roux.*

*Optional Ingredients*

- Bread crumbs (panko)
- Protein (chicken or bacon)
- Salt/Pepper

*Cooking Instructions:*
*_(I'll go over the video version, however, with the home made cheese recipe, use that instead of the packet. All the directions will be similar)_*

Boil your elbow macaroni as instructed on the box, minus a minute so it's about or at Al Dente *(roughly 7-8 minutes).* Salt your pasta water also while boiling if you'd like).

Pre-heat oven at 350 degrees (F) and *grease your baking* pan with oil or butter. Leave aside and prepare your veggies. Dice up onions and bell peppers.

Preheat pan and coat it with oil. Cook the veggies for 3-5 minutes on medium heat, set aside.

In a cooking pot or dutch oven, add about *4 TBS of butter and ¼ cup (50-52 grams) of flour.* Whisk for one minutes and off the heat.

Add your powdered seasonings *(Onion, Garlic, Red Chili, Smoked Paprika: 1-2 Tsp), * turn heat on medium and add your milk (2 to 2½ cups).

*_At this point, _* stir everything and decide if you are doing *homemade cheese or packet.* If *packet cheese, * just follow the video from here as it is self explanatory.

Blend, mix together, add to baking pan, and *bake at 350 degrees (F) for 35-45 minutes.* Garnish and enjoy your Murican childhood. ❤

*Anything optional* like bacon+bread crumbs (panko), add *before you bake, * assemble on the top before adding shredded cheese.

With regular bread crumbs, they may need a slight fry to crisp up before hand.

*With chicken, * slice it into cubes or thin strips, cook it on the pan that had the veggies. Season *before cooking (1-2 Tsp of the powders will work+ salt/pepper).* Cook chicken for *8-10 minutes, use 2 TBS of butter* to help baste and add juicy flavor. Set aside and let rest until ready to bake (mix the chicken into the layers, not on top).

*(Homemade Cheese)*

For the most part, *follow the recipe above* when cooking your roux down, add one layer of milk and cheese and melt slowly (medium to medium high heat). If you divided it into 3 piles (about 1½ cups each) while adding the milk, it will melt really nicely. Taper it in slowly.

This should be *about 5-6 minutes.* You want a creamy consistency, so if it sticks to the spoon and drips a nice creamy layer, it's about ready. You may want to *add in 2-3 more TBS of butter* for the cheese.

Add your macaroni when you're ready, blend and *add your optionals now* in the baking pan. Spread the shredded cheese on top, bake at *350 degrees (F) for 35-45 minutes.* Garnish and Enjoy! ❤
