VW Golf mk4 Brakes Make grinding sound/noise after new disc/rotors

After fitting new discs/rotors and brake pads to my 2001 VW Golf TDI there was a grinding metallic scraping noise coming from the wheel. On inspection the calliper bolts were rubbing against the rear surface of the rotor/disc. The problem was that I'd been supplied the wrong size rotor disc and they should have been 288mm not 280mm. The 280 will fit but is 37mm thick not the 34mm of the 288 disc/rotor. The 3mm is the clearance stopping the bolt grinding on the rear surface.

The size was wrong and it is rubbing against that bolt.
