What I eat on a day running 20 miles on a plant based diet!

Energy Gel Recipe (makes 4)

4 Medjool Dates (soaked in water for an hour)
1 tbsp Chia Seeds
2 tbsp Fresh Lemon Juice - about 1/2 lemon
2 tbsp Agave Nectar
Pinch Himalayan Salt
1 tbsp Raw Cacao Powder
4 tbsp Water - from the water the dates were soaking in
2 tsp Black Strap Molasses

1. Cover the dates in water in a bowl and soak for an hour. Set the water aside for later.
2. Use 4 tbsp of the water that the dates were soaking in to blend with all the ingredients. Blend until smooth in a nutribullet or something similar.
3. Spoon into 4 sandwich bags and keep in the fridge or freezer.
4. Use during high endurance running or workouts. I used one energy gel after 12 miles and then another after 17 miles.

Electrolyte Water (makes 2 bottles)

1.5 litres Water
1/4 cup lemon Juice - about 1 1/2 lemons
1/4 cup Lime Juice - about 2 1/2 limes
1/2 tsp Himalayan Salt
1 Orange, Juice

1. Squeeze the juice from the lemons, limes and orange and mix well into the water with the salt.
2. Pour into two bottles, and keep in the fridge. Shake well before drinking.
3. I started sipping on mine slowly after about 10 miles. Try not to drink it too quickly.

I'm a nutrition and dietetics graduate student in the US and one of my professors does ultra marathons and Ironman races. Like yourself, she's very conscious of what she puts in her body as fuel. She uses a homemade fuel on her longer runs that consists of 1 banana, 1 small, cooked sweet potato, 1 Tbsp of peanut butter (heated in the microwave for ~20 second), 1 Tbsp of chia seeds, 1/4 tsp. cinnamon and a drizzle of honey. Mash all the ingredients together and there you go! It seems like you've got your fuel for this marathon set, but I thought I'd share this with you, in case you decide you want to mix it up if you do another distance race! Good luck!

home made energy gels can also go into baby home made fruit squeeze packets! they are also reusable. It might be easier for you to hold the gels than in a bag.

I changed to coconut and almond milk recently, and I feel so much more refreshed. My skin has improved a lot and I seem to have more energy!! Thanks Niomi, I wouldn't have changed if I hadn't started watching your videos!! Stay awesome!! xxx

Good luck on the marathon! Looks like you're doing everything right. Few suggestions from my marathon experience: bring an extra hair tie, Epsom salt baths will be your best friend, and even if you don't think you'll need it, bring some pain relievers for the run. They may help you get thru the last mile or so if you are aching. Good luck and rock it girl!!
