Ingredients:
1 pastry sheet
10oz fresh spinach
7-8oz ricotta (it comes in a cuonof 15oz, so just do half)
2/3 cup Parmigiano Reggiano
Pinch of salt
Black pepper

Instructions:
Preheat oven at 395°F.

Layer a pan with parchment paper and set aside.

Thaw puff pastry following the package instructions.
Sautee spinach with some extra virgin olive oil and a pinch of salt, until fully cooked. This helps to drain the moisture out.
Alternatively, you can microwave the spinach with water but make sure to squeeze the water with some paper towel.
Chop the spinach and mix with ricotta, Parmigiano reggiano.

Roll puff pastry out slightly.
Cut it in 3 pieces. Fill each piece (length wise) with the spinach ricotta mixture on one side. Fold the other half making sure to seal. Cut into 1.5in pieces. Make some small cuts on top and brush with some milk.

Bake for 12-15 minutes until golden on top.

Serve warm or cold.
