I used to work at a five guys during college, and theres a trick to the frys. after letting the precooks cool for about 2 minutes, squish it between your fingers, the skin should not break. they should be a dull color. and for the final cooks, the should turn a golden color, and another squish test. if you split the fry in half and squish the end, it should almost look like mashed potatos. And when you eat it, it should have a crispy outside and a creamy inside. Hope JP and Julia see this!!
