A trick I learned from my grandma: if you cook the beans with fat or salt, the husk gets too firm. For even more creamy beans, cook them first in just water, then do the sofrito, combine and let it simmer for 5 to 10 min for the flavours to really get to know each other

as a Cuban, my family never used pork in anything for religious reasons, and it never diminished taste. The spices stand up on their own.

Beans, rice, kale, avocado, sweet potato and cauliflower and/or broccoli is my go-to breakfast/lunch and often dinner, too. Can't be beat.

I'm from Colombia and our national dish is also beans, rice, plantain and avocado. I honestly could eat that every day of my life. We also add pico de gallo (onion, tomato, lime and cilantro salad) and it gives it another dimension. And it's also so extremely healthy!

I am a 63 yo man who has just re-discovered pulses...20 years ago I lived on them, mostly out of financial necessity and partly out of a philosophical failure to see why we should grow perfectly good crops only to feed them to animals which we then eat.
Anyway, time passes, habits change and now I find myself back at square one, looking to get fitter again and realising that non-meat protein is the way forward (along with exercise, saunas, cold showers, reduced use of electronic devices. oh and no sugar...).
I had already started doing batch cooking for the freezer so that I have different pulse-based things to microwave for lunch. This morning I got up early to try making this black bean stew. What I found revelatory is that I've always soaked and then boiled the beans separately, before adding to the dish. It never occurred to me to cook them with the flavour enhancing ingredients. Bloody delicious. Thank you so much.

My grandma is from Cuba and she would make us this meal all the time when we were kids! She grew up in Morón, Cuba and came to California in the 60s. Her black beans and plátanos maduros fritos were the best 😋

I never had any luck with basil. Until this year. I tried the buy one over packed pot of basil from the supermarket. i soaked it, split it into more than 20 pots gave half away and now have so much basil we have homemade pesto weekly . certainly the way for me to make it work for me.

For us Indians, the staple beans and rice dish that everyone loves is rajma chawal. Canned beans aren’t a thing here for most part, so we reduce the cooking time by soaking them overnight and then boiling them in pressure cooker. A pressure cooker is standard in most our houses. It cooks the beans in 25-30 mins. Similarly it reduces cooking time of most things by 30-50%. (Boiling potatoes, cooking lentils etc). The hack I use from a known Indian chef if I forgot to soak them overnight is to put them in the soaking water on gas and bring the water to a boil. Then cover it and turn the heat off and let it soak for almost two hours. This isn’t as efficient as overnight but cuts down cooking time by a lot.

Having lived in SoFlo for many, many years I’ve grown to love Cuban food. Black beans, rice and plantins make the perfect meal. Yum 😋. Oh, forgot to add, the real Cubans always add a dash of vinegar atop the beans and rice before eating and it just adds a little kick to tickle the taste buds.

you can also pressure cook the beans for around 30 minutes with all the spices included - I always do it for our "feijoada" in brazil and it tastes amazing ✨
