@2:34 - if you don't see the Edition selection, just click on "BACK" and then click on "Next" then you would see the different edition of Windows.
(the edition don't show up, if its configured on the media(usb, iso, disc) or if its detected in the bios/uefi.

I feel like they took some UI notes from "Macrium Reflect". -- It is like you said though a lot of "reset pc" looks. Looking forward to your autopilot testing!

The wrong taskbar was too real lol. 1000% I would pick the wrong bar more than once.

"anyone can run sudo".. that prompted UAC.. I assume if you're not admin it would present credentials and there's a group or some other you can add to allow sudo elevation maybe?
