Good looking recipe. I grew up in Texas where we make "real" Frito Pie (Lol). Corn, bell pepper, lemon juice and pork are all foreign and would invoke real laughs in Big D. We start with a bowl of Texas Red as hot as you like it. Fritos originated in SAT. Often we just open a personal size bag of Fritos pour in the chili and ad the fixins of white onions and shredded cheese. For a casserole we layer Fritos, chili, onions, cheese. Usually about two layers of each. Yum

We just ate Frito Pie last night. I have never seen a Frito Pie Casserole. Will try this next time. Here in Texas, we just pile everyting in a bowl & dig in.

So is it a pie or a Casserole? And pie has a crust so I don't know why people call a frito pie a pie. Pie is something with crust.
